Kolaches
Soft and slightly sweet doughy pastry with limitless filling variety!
Dough
Ingredients
- 1 Package of Active Dry Yeast (2 1/4 Teaspoons)
- 1 Cup of Warm Milk (100F Degrees)
- 1/2 Cup Sugar
- 4 Cups All-Purpose Flour
- 3 Eggs
- 1/2 Cup Melted Butter
- 1 Teaspoon Salt
Steps
- In a large bowl, combine yeast and warm milk. Let sit for 10 minutes to allow for yeast to activate. Add sugar and mix in 1 cup of flour. Cover and let rise for 1 hour.
- In a small bowl, beat 2 eggs and add salt. Slowly add the melted butter to not cook the eggs.
- Combine the dough and the egg mixture.
- Mix in flour to the mixture 1/2 cup at a time, incorporating the flour into the dough.
- Knead the dough for 10 minutes by hand, or a stand mixer on low-medium speed. The dough will be soft and sticky. Cover for 1 1/2 hours to rise.
- Split dough into 18-24 portions depending on desired size.
- For each portion, roll out into thin flat rounds, and add filling. Wrap fillings into a ball and crease the seams. Place filled balls seem side down on a baking sheet.
- In a small bowl, beat 1 egg and use as an egg wash on the filled dough balls.
- Bake at 375F for ~20 minutes or until top is golden brown.
Note: The dough is meant to be soft, slightly sticky, and very flexible.
Jalapeno Popper Filling
Ingredients
- 2 Packages of Cream Cheese
- 4-6 Jalapenos
- 1/2 Pack of Bacon
Steps
- Take out cream cheese and allow to sit in room temp for 30 minutes. Can skip in a hurry but makes mixing easier.
- Cook bacon in the oven halfway, 400F for ~7 minutes. They will finish baking inside the dough.
- Dice bacon and jalapenos into very small cubes.
- In a medium bowl, combine all ingredients and mix well.
- Fill Kolaches with 2-3 Tablespoons of the filling.
Pepperoni Pizza Filling
Ingredients
- 1 Package of Pepperoni
- 1 Cup of Shredded Mozzarella Cheese
- 1 Cup of Pizza Sauce
Steps
- In an ice tray or 1 Tablespoon sized freezer cubes, freeze pizza sauce. This allows for easier wrapping as filling.
- Fill Kolaches with 1 frozen pizza sauce cube, 1-2 Tablespoons of cheese, and a pinch full of pepperoni.
